In the Kitchen: Summer Salsa

I’d like to share another great recipe from my American Heart Association cookbook. This one is really fantastic. You can use this as a salsa or eat it as a side dish. With the creamy texture of the avocado, it makes a nice stand in for a healthy alternative to mayo-laden potato salad.
1 med. avocado, cut into 1/2″ cubes
1 1/2 c. diced mango
1/4 c. finely chopped red onion
1/4 c. snipped fresh cilantro (I used much less, as I am not crazy about cilantro)
1/4 c. fresh lime juice
1 t. sugar
In a medium bowl, toss the ingredients gently. Refrigerate for a couple of hours so the flavors can blend.
If you wish to have a salsa as opposed to the salad, just chop the fruits in much smaller pieces.

Please note: My friend over at the City Life Eats blog has another recipe with avocado I’d like you to check out. It’s for a Tomatillo Avocado Salsa.

ENJOY!
