Monday's Food: Summer Avocado & Mango Salad


I'd like to share another great recipe from my American Heart Association cookbook. This one is really fantastic. You can use this as a salsa or eat it as a side dish. With the creamy texture of the avocado, it makes a nice stand it for a healthy alternative to mayo-laden potato salad.

1 med. avocado, cut into 1/2" cubes
1 1/2 c. diced mango
1/4 c. finely chopped red onion
1/4 c. snipped fresh cilantro (I used much less, as I am not crazy about cilantro)
1/4 c. fresh lime juice
1 t. sugar

In a medium bowl, toss the ingredients gently. Regrigerate for a couple of hours so the flavors can blend.

If you wish to have a salsa as opposed to the salad, just chop the fruits in much smaller pieces.
